Oat Flour Chocolate Chip Cookies

These oat flour cookies are delicious, thick and just the right amount of sweetness to make it the perfect treat!

  • 2 flax eggs, instructions below
  • 1/2 cup almond butter
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups oat flour
  • 1/2 cup rolled oats
  • 1/2 tbsp baking powder
  • 1/2 tbsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips, vegan


  • Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper.
  • Make the flax eggs by combining 2 tbsp flaxseed with 6 tbsps warm water. Set aside for 5 minutes.
  • Mix flour, oats, baking powder, baking soda and salt in small mixing bowl.
  • Mix peanut butter, maple syrup and vanilla extract in medium bowl.
  • Add in the flax eggs to the wet mixture and mix to combine.
  • Add in the dry ingredients to the wet mixture and stir until combined.
  • Add in chocolate chips and lightly mix to distribute throughout the dough.
  • Spoon cookie dough onto prepared cookie sheet and cook for 12-14 minutes. The bottom of the cookies should be slightly browned.
  • Cool on cooling rack and enjoy! Store in an air tight container on the counter for 5 days.
