Chocolate Covered Peanut Butter Stuffed Dates

These peanut butter stuffed dates are super simple yet really indulgent! I love making them because they’re quick to make and always hit the spot of my sugar craving 🙂

Dates are naturally sweet, so it doesn’t take much added sugar to make these little sweet treats which I love. You could also use sugar-free chocolate chips if you want to completely omit the sugar. You can make these with any kind of nut or seed butter you like and add whatever toppings you enjoy. I also like to keep the chocolate chips unmelted and add them to the stuffing as well! I hope you enjoy these as much as I do!

Ingredients

Dates – This is the main ingredient in this recipe. Make sure your dates are pitted and fresh. I use medjool dates but you could also use deglet dates if you can’t find medjool. To pit the dates, gently take out the pit in the middle and make a small cavity with your finger for the nut butter.

Peanut butter – You could substitute this with any nut or seed butter. I prefer peanut butter but almond butter or cashew butter would also be delicious.

Vegan chocolate chips – If you aren’t vegan, you can use regular chocolate chips. If you are vegan/dairy-free, I like the Enjoy Life brand. I like to use dark chocolate chips but any type of chocolate chip works.

Flaky sea salt – I know I said this is optional in the ingredients, but it really isn’t 😉 Especially if your peanut butter doesn’t have salt added, this really brings out the sweet and salty taste.

Toppings – This is where you can have a little fun with this dessert. Feel free to add almonds, coconut, dragon fruit powder, chocolate chips or whatever you like onto your dates. You could also omit this step and eat them as is, they are still delicious.

Instructions

  1. If your dates aren’t already pitted, pit them. Cut a small whole down the middle or use your fingers to remove the pit.
  2. Open the dates just enough so there is a cavity that you can fill. Fill this will peanut butter.
  3. Once the dates are filled, close the cavity by putting the two ends back together.
  4. Melt chocolate in microwave safe bowl. Cover dates in chocolate or sprinkle on top.
  5. While chocolate is still melted, add your choice of toppings. I love flaky sea salt and almonds.
  6. Enjoy!

Storing Instructions

Store dates in an air tight container in the fridge for up to 5 days or in the freezer for up to 3 months.

  • 1 tbsp chocolate chips

Instructions
