Raw Vegan Nutter Butter Copy Cat

One of my favorite cookies growing up was Nutter Butters. I decided to try and recreate them with raw, vegan ingredients and I love how they turned out! These are definitely a great alternative to Nutter Butters and pretty simple to make too!

It does take a bit of time to make the balls and shape them into peanut-shaped cookies so you could easily skip this step and make them regular sandwich cookies, but I love how cute they look like Nutter Butters!

Ingredients

Peanut butter – This is pretty self explanatory but you can’t have Nutter Butter copy cats without peanut butter 😉 This ingredient has no substitutions, if you try it with a different nut butter, they will not taste like Nutter Butters.

Almond flour – I love using this flour for how light it tastes. It’s a light tasting flour and it doesn’t overpower or dry out the cookies.

Dates – Dates give the cookies their sweetness without adding any extra sugar. I prefer to use Medjool dates but you could also use deglet dates. If you’re dates are old or dry, soak them in warm water for 5-10 minutes before using to soften them up.

Peanut butter powder – You can use any brand you like. I used PB Fit. You could also use regular peanut butter but you may need to add a little almond flour so that your filling stays on the cookies.

Maple syrup – One of my favorite natural sweeteners. Maple syrup adds a little sweetness ot the filling. You could also use Lakanto sugar free maple syrup if you want to avoid added sugar.

Instructions

  1. Blend all ingredients from the cookie ingredient section in food processor until blended.
  2. Form into 24 balls and place onto parchment lined baking dish. Press the balls down into rounds and press 2 rounds together so they form peanut shaped cookies. Set aside.
  3. For the filling: Mix the powdered peanut butter and maple syrup together in a small bowl. If the mixture is too thick, add about a tablespoon of almond milk to thin it out. You want it thick enough to stay on the cookies.
  4. Spoon filling mixture onto 4 of the peanut shaped cookies. Top the cookies with the other 4 cookies so they look like Nutter Butters.
  5. Enjoy!

Storing Instructions

Store cookies in an air tight container in the fridge for up to 5 days or in the freezer for up to 3 months.

  • 8 dates (150 g) dates
  • 1/4 cup (64 g) peanut butter
  • 3/4 cup (84 g) almond flour
  • 1 tsp (4 g) vanilla
  • 1/4 tsp salt

PB Filling

  • 2 tbsp (16 g) powdered peanut butter
  • 1 tbsp (18g) maple syrup
  • 1/2 tbsp (5g) almond milk, optional
