I was going down memory lane the other day and I remembered some of my favorite childhood snacks. One of them was the General Mills cereal bars which I don’t think they make anymore. Below is a picture of the bars I’m referring to. I instantly knew that I had to make my own version of them! Even if they are still around, I knew they weren’t vegan so I gathered some supplies and started experimenting.

These bars are perfect for sweet treat in the afternoon or as a dessert. While they are called cereal bars, I’m not sure they’re the most nutritious breakfast but you could have them for breakfast if you wanted.
The peanut butter in the Cheerio base combined with the sweetness from the milk topping makes these the perfect sweet and salty treat. You could also switch up the cereal and use whatever kind you like!

Ingredients
Cheerios – As I mentioned above, you could easily switch this up and use whatever kind of cereal you like. Honey nut Cheerios or Cocoa Puffs would be delicious.
Peanut butter – This helps hold the bars together and give it a salty taste. You could swab this for any nut or seed butter.
Maple syrup – This adds just the right of sweetness to the bars without being too overpowering.
Coconut oil – This will be the main base for the “milk” portion of the bar. You want your coconut oil to be room temperature. If your oil is too liquidy, you can put it in the fridge for ~30 minutes to harden up.
Soy milk – You could swab this out for any other nut milk. Oat milk would also be good.
Instructions
- Line loaf pan with parchment paper and set aside.
- Mix peanut butter, maple syrup, and vanilla extract in a medium bowl.
- Add in Cheerios and mix until coated.
- Transfer mixture to loaf pan and press down until evenly distributed.
- Place in freezer to harden while you make the milk topping.
- Mix coconut oil, maple syrup and soy milk until combined. Make sure your coconut oil is room temperature. This will take a little bit of time until it is thoroughly mixed.
- Pour milk mixture over Cheerio base and freeze for 1-2 hours until set.
- Once bars are set, cut and enjoy!

Storing Instructions
Store bars in an air tight container in the freezer for several months.
Vegan Milk & Cereal Bars

Cereal Base
- 1/4 cup peanut butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 cup Cheerios
Milk Topping
- 1/2 cup coconut oil
- 1/4 cup maple syrup
- 1 tbsp soy milk
Instructions
- Line loaf pan with parchment paper and set aside.
- Mix peanut butter, maple syrup, and vanilla extract in a medium bowl.
- Add in Cheerios and mix until coated.
- Transfer mixture to loaf pan and press down until evenly distributed.
- Place in freezer to harden while you make the milk topping.
- Mix coconut oil, maple syrup and soy milk until combined. Make sure your coconut oil is room temperature. This will take a little bit of time until it is thoroughly mixed.
