These copycat perfect bars are the perfect energy bars to make at home and bring for hikes or enjoy as an afternoon snack. They are made from clean, simple ingredients.

Ingredients
Oat flour – You can buy this from the store or make your own. One perk of buying it from the store is that the flour is very fine. However, you can also easily make your own. Personally, I like to make my own because I buy the bulk oats from Costco and it’s very easy to do. To make your own, simply blend oats in a food processor until they resemble flour, about 1-2 minutes.
Peanut butter – this recipe works best if you have natural, drippy peanut butter. If your peanut butter is too hard, warm it up in the microwave for 30-60 seconds.
Honey – If you prefer to make this recipe vegan, you can substitute maple syrup. Since Perfect Bars use honey, I wanted to also use honey to recreate the same taste.
Shredded coconut – I like the added flavor and texture this gives the bars but you can also leave this out and sub additional oat flour.
Vegan protein powder – You can use either protein powder or an unflavored plant based protein. If you use protein powder, make sure you like the taste of it. I recommend using Orgain vegan protein. “LAURAL” saves you 30% if you want to try it. If you don’t need to keep this recipe dairy-free, you can use whey protein powder.
Instructions
- Mix together peanut butter, honey and vanilla extract.
- Add remaining ingredients except chocolate chips and mix until combined.
- Press dough into a loaf pan lined with parchment paper. Top with chocolate chips.
- Let chill in fridge for 1 hour, cut into bars and enjoy!
- Store in air tight container in the fridge for up to 5 days or in the freezer for up to 3 months.

- 1 tsp vanilla extract
- 1/2 cup oat flour
- 1/4 cup vanilla protein powder
- 1/4 cup shredded coconut
- 1/4 tsp salt
- 1 tbsp chocolate chips
