Cashew Hemp Bars

Looking for an energy bar recipe that’s high in protein, healthy fats and contains no added sugar?! Then these bars are perfect! They are made with whole, plant based ingredients and contain a lot of essential vitamins and minerals. They are quick and easy to make and I was able to find all the ingredients at my local Costco. There are only 4 main ingredients which make them great to try if you’re a beginner to vegan cooking too.

These bars make 5 large bars or you can cut them in half and make 10 smaller bars. Because of the cashews, hemp hearts and almond butter, they are pretty filling from all of the healthy fats so I usually like to cut them into smaller bars and have them as a small snack.

Ingredients

Cashews – This is the base of the bars so I recommend you use unroasted and unsalted.

Hemp hearts – These are full of omega 3s & 6s and give the bars a nice nutty flavor.

Almond butter – This gives a nice flavor to the bars without being too overpowering and holds them together.

Dates – Dates add whole food plant based sweetness! If you’re dates are dry, soak them in warm water for 10-15 minutes.

Instructions

  1. Blend cashews in food processor until broken down into rough flour like consistency, about 1 minute.
  2. Add the rest of the ingredients and blend until combined.
  3. Spoon dough into parchment paper lined loaf pan. Press down with spatula.
  4. Chill bars in fridge or freezer until set about 2 hours. Cut into 5 large bars or 10 smaller bars/squares. Enjoy!

Storing Instructions

Store bars in an air tight container in the fridge for up to 5 days.

  • 1 tsp vanilla extract
  • 1/2 tsp salt
