These delicious oatmeal fudge bars are made with healthier ingredients like maple syrup, almond butter and coconut oil! These were inspired by Starbucks’ oatmeal fudge bars because sometimes you don’t want to spend the money to go to Starbucks but you still want their delicious treats.

Ingredients
Rolled oats – These are fiber and protein to these bars.
Almond flour – This will help create a crumbly texture that also holds up well together.
Almond butter – This gives a create flavor to the bars without being too overpowering.
Coconut oil – This helps the ingredients bind together and improves the taste.
Maple syrup – Adds the perfect amount of sweetness to the bars.
Cacao paste – Can be substituted with baking chocolate or chocolate chips. If you substitute with chocolate chips, omit the powdered sugar.
Powdered sugar – Adds sweetness to the fudge. You can also use chocolate chips instead of cacao paste and powdered sugar.
Coconut milk – This makes the fudge rich and creamy.
Instructions
- Preheat oven to 350 degrees.
- Line a loaf pan with parchment paper.
- Mix all the ingredients in the oat base until blended.
- Spoon 3/4 of the mixture onto the pan. Reserve the other 1/4.
- Make the fudge by melting the chocolate in a double boiler or in a microwave. Add in the coconut milk and powdered sugar until combined.
- Spoon fudge mixture over oat base. Spoon remaining oat mixture on top.
- Bake in oven for 20 minutes. Cool and enjoy!

Storing Instructions
Store bars in an air tight container on the counter for up to 5 days.

- 1/4 cup (20 g) rolled oats
- 1/2 cup (56 g) almond flour
- 1 tbsp (15 g) maple syrup
- 2 tbsp (30 g) coconut oil, melted
- 1/4 cup (64 g) almond butter
- 1/2 tsp vanilla
- 1/2 tsp salt
Fudge
- 1/4 cup (28 g) cacao paste or baking chocolate*
- 2 tbsp powdered sugar*
- 1/4 cup (60 g) coconut milk, solid part at the top of can
Instructions
- Preheat oven to 350 degrees.
