Lemon Coconut Bliss Balls

This recipe is perfect if you’re looking for a sweet recipe that doesn’t contain chocolate. Personally, I am a chocolate fan, but every once in awhile I need a sweet treat that doesn’t contain chocolate. That’s where these bliss balls come in. They’re the perfect sweet and lemony treat to get your through the day.

These bliss balls contain no added sugar and get their sweetness from dates. They are packed with vitamins and nutrients and will keep you energized throughout the day.

Ingredient Notes

Cashews – I buy these in bulk at Costco. I recommend the plain (unsalted & unroasted) cashews.

Coconut shreds – Make sure these are unsweetened. A lot of stores only sell sweetened coconut so make sure you buy the right kind. If you can only find the thick chuck coconut, you can blend it in your food processor to make it smaller.

Almond flour – you can buy this for a good price at Costco or Walmart. If your dough is a little wet, add more almond flour to get a good consistency.

Dates – medjool dates work great in this recipe. If your dates are a little dry, you can soak them in warm water for 5-10 minutes; however, it’s not necessary for this recipe since it contains a decent amount of liquid.

Lemon juice – I recommend using fresh lemon juice for this recipe. I zest the lemon first and then juice it. 2 tablespoons is about 1/2 a lemon.

Instructions

  1. Add cashews to food processor and blend until it’s the consistency of flour. Don’t over blend or you’ll get cashew butter.
  2. Add in the remaining ingredients and pulse until well blended. If your dough is too wet, you can add more almond flour to make it less wet.
  3. Scoop out 12 balls of dough and chill in fridge or freezer 1-2 hours to set.
  4. Enjoy!

Notes

  • These are great right out of the freezer or fridge.

Storing Instructions

Store bliss balls in an air tight container in the fridge for up to a week or in the freezer for several months.

  • 2 tbsp lemon juice
  • 1 tsp lemon zest

  • Add cashews to food processor and blend until it's the consistency of flour.
  • Add in the remaining ingredients and pulse until well blended.
  • Scoop out 12 balls of dough and chill in fridge or freezer 1-2 hours to set.
  • Enjoy!
