Quick & Easy Low Fat Brownie Bites

It seems like it’s been forever since I’ve posted a recipe on here! While I’ve been experimenting in the kitchen a lot this past year, the recipes I make usually don’t make it to the blog for one of two reasons. One, they’re not the most visually appealing. And two, my husband and I usually eat a majority of them before I even think about taking pictures. Let’s face it, a recipe without pictures is just not worth making! So I’m happy to say that I’ve finally made these brownie bites enough times that I have quality pictures to include with the recipe!

I started making these brownie bites when I first went plant-based and wanted a healthier alternative to brownies. I didn’t want to eat a ton of added sugar but also wanted something that hit my craving for a sweet treat. I was pleasantly surprised with these since they have no added sugar (except the chocolate chips) and they are fairly low calorie and high fiber. I do want to preface this however, and say they are NOT brownies. If you want the sweet chocolatey taste of a brownie, you’re going to have to add maple syrup or sugar. I made the mistake of offering one of these to my mom since she said she was trying to eat less processed sugar and she did not like these because she was excepting my usual treats (aka a lot more maple syrup, coconut oil, & sugar lol). That being said, I do find these bites the perfect balance of healthy yet delicious. You just need to know what you’re getting. There’s nothing wrong with eating brownies or cookies but sometimes I just want something that’s a little bit healthier and little less calorically dense.

Low-Fat Vegan Brownie Bites

Quick and easy low fat brownie bites that will satisfy your sweet tooth.

Ingredients

  • 100 g dates
  • 1/2 cup oats (40 g)
  • 1 can black beans rinsed and drained
  • 1/4 cup cacao powder (20g)
  • 1 tsp vanilla
  • 2 tbsp vegan chocolate chips

Instructions

  • Mix all ingredients in a food processor until well combined.
  • Roll into 12 balls and place in fridge to set for at least 2 hours.
  • Enjoy these straight from the fridge or warmed up for a few seconds in the microwave!

Servings: 12 balls

Total Time: 2 hours 10 mins

Ingredients:
100g dates
1/2c oats (40g)
1 can black beans, rinsed & drained
1/4c cacao powder (20g)
1 tsp vanilla
2 tbsp vegan chocolate chips (30g)

Directions:
Mix all ingredients in a food processor until well combined. Roll into 12 balls and place in fridge to set for at least 2 hours. Enjoy these straight from the fridge or warmed up for a few seconds in the microwave!

Tips & Tricks:
-If your dates are dry, place them in a bowl of warm water for 10-15 minutes before using.
-For longer storage, store these in the freezer and heat them up for 15 seconds in the microwave.
-Add different mix-ins or toppings depending on your preference. Some nuts or dried fruit would also be great in these!
