Quick & Easy Healthy Desserts

As I’ve said many times before in my blog, I loooovvveeee dessert.  Sweets are my weakness and I will forever be jealous of those who do not have a sweet tooth.  Over the years, I’ve found that having a sweet tooth isn’t all that bad and there are ways that you can satisfy your craving in a healthy way.  Below are a few of my top recipes to satisfy your sweet tooth in a delicious AND healthy way.

Homemade Dark Chocolate

Homemade Dark Chocolate
½ cup coconut oil
4-6 tbsp maple syrup (depending on how sweet you like your chocolate)
1 1/3 cup cacao powder
Toppings: almonds, shredded coconut, goji berries (optional)

Directions: Melt coconut oil in a saucepan.  Once melted, combine maple syrup and cacao powder until combined.  Taste the chocolate for sweetness and add more maple syrup if needed.  Spread chocolate on a wax covered sheet and top with desired toppings.  Chill in the freezer for an hour or until hardened.  Once hardened, take the chocolate out of the freezer and cut into pieces.

Peanut Butter Chocolate Chip Cookies
2 ripe bananas
1 ½ cup quick oats
¼ cup peanut butter
¼ cup Lily’s chocolate chips

Directions: Preheat oven to 350°.  Mash bananas in a medium bowl until you get a smooth consistency.  Add in oats, peanut butter and chocolate chips and mix until combined.  Drop mixture by tablespoons onto parchment lined cookie sheet.  Bake 12-15 minutes until lightly browned.

Chocolate Peanut Butter Cups
¾ cup dark chocolate chips
¼ cup almond milk at room temperature
1 cup powdered peanut butter
½ cup water

Directions: Line 24 mini muffin tins with cupcake liners.  Melt dark chocolate chips in microwave until melted.  Add almond milk and stir until combined.  Use ½ the chocolate mixture and spread in the bottom of the mini muffin tin.  Place in freezer.  While chocolate mixture is in freezer, combine powdered peanut butter with water until well combined.  Take muffin tin out of freezer and pour peanut butter mixture evenly over each chocolate lined muffin cup.  Place in the freezer for 30 minutes.  Once peanut butter mixture has hardened, take muffin tin out of the freezer and top each muffin cup evenly with the remaining chocolate mixture.  Store in freezer and enjoy!
